LET'S MAKE SOMETHING GOOD

One step at a time.

  1. Whisk the coating

Whisk eggs, milk, vanilla and cinnamon in a shallow dish until the egg is evenly mixed.

    WHAT TO LOOK FOR

A few cinnamon specks are normal; avoid separate streaks of egg white.

  2. Dip the first slices

Warm the skillet over medium low heat with half the cooking butter and oil. Dip two slices in the egg mixture for about 10 seconds per side, then let excess drip off.

    WHAT TO LOOK FOR

Coat the bread without leaving it submerged until it falls apart. Bread absorbs at different rates.

  3. Cook through gently

Cook the slices for about 3 minutes per side, adjusting the heat as needed. Check the center with an instant read thermometer: the egg mixture must reach 160°F (71°C). Cook longer over lower heat if needed.

    WHAT TO LOOK FOR

Golden color alone does not establish that the egg in the center is cooked.

  4. Finish the second batch

Add remaining cooking butter and oil, dip the remaining bread and repeat. Discard any unused raw egg mixture.

    WHAT TO LOOK FOR

Wipe out blackened butter carefully before the next batch. Allow extra time if your pan holds only one slice.

  5. Serve warm

Divide the toast between two plates and add the optional serving butter.

    WHAT TO LOOK FOR

The center should be set, with no liquid egg or cold wet patch.

A LITTLE HELP ALONG THE WAY

Small details that matter.

01

Bread thickness matters.

Thicker bread needs more time for the middle to heat; very thin bread can break during dipping.

02

Keep raw egg separate.

Use a clean serving plate and wash utensils that touched the uncooked mixture.
