LET'S MAKE SOMETHING GOOD

One step at a time.

  1. Soften the onion

Heat the oil in the pot over medium low heat. Add the onion and cook for about 8 minutes, stirring. Add the garlic for the final 30 seconds.

    WHAT TO LOOK FOR

The onion should soften without dark browning. Lower the heat if it catches.

  2. Simmer gently

Add tomatoes, broth and pepper. Bring to a simmer, then partially cover and cook gently for about 20 minutes, stirring occasionally.

    WHAT TO LOOK FOR

A quiet simmer is enough. Reduce the heat if thick tomato bubbles spit out of the pot.

  3. Blend carefully

Remove the pot from the heat and allow bubbling to stop. Follow the immersion blender instructions for hot liquids. Keep the blade guard submerged while blending, and switch off before lifting it.

    WHAT TO LOOK FOR

Hot soup can splash. Use a deep pot and keep hands away from the blade; do not substitute a sealed personal blender.

  4. Add the cream

Stir in the cream, reserving a teaspoon for a swirl if you like. If too thick, add water a tablespoon at a time. Warm gently if needed, then taste and add salt.

    WHAT TO LOOK FOR

Aim for soup that pours easily from a ladle. Do not boil vigorously after adding cream.

  5. Ladle and serve

Divide into four bowls. Add the reserved cream and optional basil. Let each bowl cool to a comfortable eating temperature.

    WHAT TO LOOK FOR

This makes four small bowls; bread or another side makes a fuller meal and is extra.

A LITTLE HELP ALONG THE WAY

Small details that matter.

01

Choose plain tomatoes.

Use crushed tomatoes without added herbs or chili so the seasoning stays predictable.

02

Taste at the end.

Canned tomatoes and broth vary in salt. Adjust after the soup has simmered.

03

Keep blending simple.

An immersion blender avoids transferring hot soup. Follow your appliance manual for safe use.
